It may indeed fit better in the Yakuza engine then it did in the Dynasty Warrior one: after all, Fist of the North Star is not only about fighting and exploding heads (not sure about Ken working as a barman, though ).
Technically Shenmue on the dreamcast uses much more detailed textures, but the CG trailer uses a higher polygon count, makes use of much more complex lights, full shadows and smooth blur, everything in realtime, while on the dreamcast they're usually baked or simpler.
