I thought hard about this, so here I go:

1. Shenmue
The natural evolution of the point-and-click adventure genre coupled with the complexities of a fighting game. A world devoid of the the grotesque, darkness and cynicism that embodies present games (what would be called "mature"), and still as engaging and immersive even though there are no signs of tried and true conventions such as gunfights and explosions. Simply a masterpiece.

2. Super Metroid
Never thought a 2D platform world could have so much depth regarding exploration of its world and game mechanics before this game showed up.

3. Metal Gear Solid 2
It was then that I realized its creator was such a master of his craft. So much fun being trolled by a videogame.

4. Eternal Darkness
Wall breaking psychological fear pointed straight towards the player, never again replicated in the horror adventure genre. Worth also mentioning the quite deep game mechanics compared to the average survival horror's run and gun.

5. Sid Meier's Pirates
One of the very few games ever in which time has a consequential weight on the player, having a meaningful impact in the game's core mechanics the longer it goes.

6. Street Fighter 2
Before this game, the fighting genre was as complex as a game of Pong.

7. Far Cry 2
It's here that I learned anything could go wrong during an intense gunfight, such as my avatar suddenly coughing blood due to his deteriorating health or my gun malfunctioning in the heat of the battle. Truly an immersive experience unlike another.

8. Fire Emblem Genealogy of the Holy War
Father of all SRPGs, with this particular title differing from others in the series due to its long battles and huge maps, besides the generational storyline, which renders the game an epic feel to it.

9. Planescape Torment
Extensive dialogue tree and decision making preceding over battle tactics, a sign of an awesome CRPG.

10. The Shadow of the Colossus
An average human avatar, devoid of any superhuman powers and equipped simply with a sword, a bow and his horse, battling against jaw-dropping titanesque creatures. All that while the game makes the player question the nature of his actions midway. Can it get any more epic than this?

If Shenmue doesn't count, then my next pick would be:

11. Demon's Souls
A roguelike journey into the dark. Think of Alice's rabbit hole, but replace Wonderland with Dante's Inferno.

1. Shenmue 1 & 2 (and 3 most likely)
2. The Legend of Zelda: Ocarina of Time
3. Panzer Dragoon Saga & Orta
4. Silent Hill series (particularly 2 & 4)
5. Deus Ex
6. The Legend of Dragoon
