It can come down to several things.
For example, the quantity of dialog and its role in the overall entertainment package
I never had any qualms about the subtitles in Banjo-Kazooie, because the conversations were few and far between, fairly inconsequential, and not designed to be cinematic in any way. Not so with Shenmue or Yakuza. For games like these that aim to be more movie-like in their delivery, I prefer a more audio/visual experience.
As you might then expect, I don't tend to walk over hot coals to see subtitled movies. But as with even the chattiest of games, it's not a total deterrent and can end up being less of a nuisance in some than others.
