same here. I thought that only the huge plane passes by and thats it. Wow, I have never actually heard of this before or seen it.

So how is this cutscene triggered or does it happen everytime and my observation is poor. (Kiyuu thanks for all your little glitches that you have discovered.)

Well, that question is answered in Kiyuu's post--you see the jets on your last day in Wan Chai, instead of just the one plane you see usually.
If you mean the whole plane thing as whole, it triggers when you walk down the steps that go into Altar Shop Street.
By the way, Kiyuu, I especially like the pic you took of them at sunset

I've seen it a couple of times, I try to check it out if I remember to go down there. Thanks for the pics, Kiyuu.

To me, this is the first time to see them at night, too. I was surprised to find out that
Ryo can hang out until 11:00 pm and Xiuying gives him a midnight lesson.
