What kind of minigames do you think will be in this game?

Probably also good old dice games, darts, Lucky Hit and perhaps QTE Title. A forklift mini game of some sort is also highly likely. I hope you'll be able to skip that part, though. Personally, I hated the forklift races in S1. So annoying, having to go through the same race over and over again.

I sure hope they don't put mini-games that doesn't mesh well with the game's setting just to please the fans. If forklifts are too urban for Chobou, then I'd rather not see them. Nor an arcade.

I'm guessing there will be board games, gambling... Maybe some mini-game that has something to do with farming in Bailu. I can't remember exactly, but Shenhua said something about a job in Shenmue 2 that involves the fields, I forgot what she said, but I remember thinking "I bet I'm going to work there when I arrive at Bailu".

yup i don't think something like an arcade center would fit in SIII settings. you know what? after thinking about it even something like Arm Wrestling might not fit with the culture & traditions there.
Shenmue 2 has a complete different feel to it compared to Shenmue 1 and i believe Shenmue 3 would be an even more of a different experience compared to the rest of the games.

In china I saw some guys that fished with some birds (similar to cranes), they tied their throat, then the bird would catch a fish and the "fisherman" would take the fish that couldn't be swallowed because of the knot. An interesting part of the culture and a cool twist on the fishing thing (I guess portraying it would not be a good thing with all the PC/peta bullshit of today, but who knows).

Some hunting/catching a rabbit to eat (setting traps or some bullshit like that) could be another thing.
Maybe some minigames for farming/doing manual labor.
Maybe Shenhua teaches Ryo the art of stone carving and as he gets better he can collect different types of stones and sell those.

To me what matters most is not the type and number of mini games, but the way they contribute to the "Shenmue feel" of the game. The way they contribute to the feeling having lots of things to do, the way they're situated and built into the world, and the way they make the game feel more like a living experience.

It'll be interesting for fans to compare how much time they spend mastering minigames this time with their experiences in the first two games, now that there'll be Trophies available.
