And yeah, I know what you mean about the voices. I think that was actually supposed to be Jones(the bald, bearded sailor sitting at the counter) saying "Milk's perfect for a schoolboy I'd say!", but it came out kinda wrong..it certainly sounds like his voice anyhow.

I always interpreted the bar scene as the bearded guy saying "Milk's perfect..." etc, not the barman, while accepting that it does look a bit odd.
Talk of voice chagnes, although this is in Shenmue IIx - when you fight the Wild Man of the Mountains, the MC goes "Readdddddyyyyy!" And then a completely different voice, sounding remarkably like Homer Simpson shouts, "Go!"
